As a test task, you can give a conditional project for closing product X. Let the candidate write out the algorithm by which he would start acting and why.

No need for mega-details, rather logic. Then look at the structure and thought: if it is there, then it is more likely that the person understands what he is talking about. If it is chaos, then this is definitely not the one you need.
